Build uPlot series config array from SeriesConfig[].
spanGaps is enabled by default because aligned multi-series data contains null gaps (from float64NanToNull) at time points where a series has no value, and each satellite’s line should stay continuous across the instants where another one happened to be sampled.
A caller whose gaps mean “no value exists here” rather than “no sample
lands here” passes spanGaps: false, so the line breaks instead of
stating a value that was never computed.
